This Cookbook is broken up into three sections:
- Cooking rice
- Japanese Curry
- Gyuudon
Cooking Rice
First, almost all of the recipies in this cookbook use rice as part
of the meal. Hopefully you have a nice rice cooker. In that case,
follow these directions. First, wash your rice. Find a nice large
bowl, put in as much rice as you need, and rinse it in water. Mix
the rice up. Pour out the water. Continue until the water looks
pretty clear when you pour it out - generally this takes about three
rinses.
Next, put the rice in your rice cooker, push the button, and wait
for your rice to cook beautifully.
Japanese Curry
Japanese curry is the dish that I make most often.
For this dish, you will need:
- Rice
- Curry mix
- Two Onions
- Two potatoes
Since this is more or less just a stew, you can use other vegetables
as well, such as carrots if you like. I usually just use onions and
potatoes though.
First, take your onions, peel them, and chop them up. Then, place
them in a pot and lightly cook them until they turn a bit
transparent. You can add a bit of salt to make the onions cook a
bit quicker.
Second, peel and cut up two potatoes. Cut them up into little chunks.
Add them to the pot along with the onions, and then add about 2-3 cups
of water until you have almost covered the onions and potatoes. Bring
the water to a boil.
Add in the curry mix, and let it simmer for about 20 minutes. Every once in a while, stir the mix. If it doesn't thicken up enough after 20 minutes, you can always add another block of curry. Then, you just put it over rice, and eat! You can save the curry and re-heat it later.
Gyuudon
Gyuudon is just a simple beef on rice recipe, but it is really good.
There are other types of "dons" - like "Oyakodon" (Parent and child on
rice - chicken and an egg) or "Katsudon" - a pork cutlet on rice. I'm
going to put a Gyuudon recipe in here though, because it is easier to
make than the others, and tastes really good.
Ingredients:
- 4 cups cooked plain Japanese rice
- 1 pound thinly sliced beef
- 1 onion
- 1 1/3 cup dashi soup
- 5 tbsps soysauce
- 3 tbsps mirin
- 2 tbsps sugar
- 1 tsp sake
The ingredients shown above are, from left to right, the soy sauce,
the mirin, some sake, and the dashi soup stock. Mirin is a sweetened
sort of rice wine, you should be able to find it in any asian foods
store. You can also get Cooking Sake at most stores. The Dashi is a
powder that you put into water to make a fish-flavored soup stock.
You can make this dish without it, but it is better with it. The last
ingredient is the sugar.
How to make it:
- Cook Japanese rice.
- Slice onion thinly
- Cut beef into bite-sized pieces.
- Put dashi, soysauce, sugar, mirin, and sake in a pan.
- Add onion slices in the pot and simmer for a few minutes.
- Add beef in the pan and simmer for a few minutes.
- Serve hot Japanese rice in a bowl
- Put the beef topping on the top of rice.
After slicing the onions, put them in a pot and add in the soysauce,
sugar, mirin and sake. Let it simmer for a few minutes. When the
onions have turned a bit transparent, add in the beef and bring the
pan to a simmer. After maybe 5 or 10 minutes, serve over a bowl of
hot rice.
